Lacking inspiration for what to make for lunch, I had a hunt to see what we had in the cupboards. After finding a packet of nachos, I decided to make a French onion style tortilla soup and it worked really well.

I also had the task of thinking up an Australian inspired recipe to make with West Winds Gin and baked a batch of lamingtons.
